FOODIE FRIDAY.....EGGS - It's what's for BREAKFAST

Eggs- it's what's for breakfast (or dinner or brunch - whenever!!). It's a relatively inexpensive protein and GREAT start to your day! I will be honest in telling you it's not my favorite UNLESS it's wrapped in an omelet fulla chedda cheese, ham, green peppers and onions!! My daughter HATES eggs and equates them to smelling like wet dog! Alas, in line with my healthy lifestyle they are pretty instrumental! Here's how I tolerate eggs for breakfast!

Crack two of those bad (NOT) birds into a bowl...add a dash of milk for a fluffier egg...

I like to use coconut oil to "grease" my pan...better alternative to butta AND cooks the eggs like a dream! Add a dash of Goya Adobo (a salt mix with garlic and yummy flavors - of you're anti salt read my post LAST week). Adobo can be found at any international market store, your local spanish store and SOMETIMES a local grocer....

Add your coconut oil (this actually was a lil too much)

After mixing your eggs add to your heated fry pan where you have melted your coconut oil...

NOW, this is a BIG ONE!!! I used to make the mistake of using a "pancake" flipper like this to turn my eggs...

BUT what ya really need is THIS

A nice pliable malleable rubber spatula to get UNDER those eggs and turn them...

I like my eggs in bigger chunks so they're easier to eat on the go (I do this A LOT - eat my breakfast on the go)
I added a piece of rye toast with a pat a butta and pepper on my eggs AFTER cooking (pepper helps stimulate digestion) and VIOLA! Breakfast is served!!

SELFIE SUNDAY....Passion PEEL OFF FACE MASK

A few weeks ago I shared a "seflie sunday" post featuring a face mask I tried...I think that's a kinda fun post to do every now and then...who doesn't want to see how various beauty products work?!?! And honestly my skin is SO BAD lately....it's worse than when I was a teenager!!! SO I'm trying to figure out what works and what doesn't! Today's post is a Passion Peel Off Mask

My kids selected this mask for me for a jar of beauty gift (they are really sweet and thoughtful). When I opened the packed I expected the consistency to be thick and dark pink...it was thin and clear....

I applied it .In this "trial" size there was EXACTLY enough for my face....
I applied it right after my shower....while I waited the 20-25 minutes for it to harden I made dinner (that's what we do as moms right?!?! Multi-task!!)

When my entire face felt like it underwent a botox treatment I knew it was time to peel off the mask. BECAUSE it was so thin I had a hard time grasping an edge or corner to get started...so I crinkled my face up until it lifted and PULLED (imagine the scene from Mrs. Doubtfire when she's removing her face). Most of the mask was able to be peeled off and the parts that didn't I just splashed some warm water on my face.
I would DEF do this mask again! It removed the dead dry skin (refer to the bad skin I mentioned in the into) and left my face lookin pretty good!! Do YOU have a favorite mask!?!?

FOODIE FRIDAY....OVERNIGHT OATS

Overnight oats aren't NEW to the blogging, pinterest, insta community....BUT they may intimidate you...DON'T let them!!! A few months ago my girlfriends and I had a meal prep day and one of the items on the menu was overnight oats. They were SHOCKED at how EASY and DELISH they were!! SO here I will give you a few options for overnight oats...variety is the SPICE of life...SO TRUE!!!

I like to experiment and try new things (oats are relatively in-expensive so if it sucks just start again!! BUT save this fir a day you are eating at home BECAUSE if you take them to work and they suck you'll be HANGRY).
Most recipes you'll find on-line include using almond, coconut or regular ol' milk as your liquid. You can do ANYTHING you want - water, milk, cream (this will give you a thicker more hearty oat BUT not diet friendly). I subbed the majority of my liquid for applesauce-  if you can use it in place of oil in recipes why not for oats?!?! Again, most recipes call for 1/4 cup of oats to a 1/2 cup of liquid...
For this particular recipe I used prepackaged oats & flax from Aldi....used a 1/4 cup of water and a 1/4 cup of UNSWEETENED apple sauce. Sprinkled some cinnamon and a pinch of coarse Chili salt for a lil kick (THIS IS MY ALL TIME FAVE "SECRET INGREDIENT").  Don't be afraid of salt -as with EVERYTHING in moderation it's perfectly fine, necessary and in fact salt aids in blood sugar control, it's a natural antihistamine, the body needs salt to maintain a proper PH in the stomach, lowers adrenaline spikes, improves sleep quality, encourages a healthy weight and fast metabolism, supports thyroid function - this is REAL people (the facts were found here http://empoweredsustenance.com/salt-is-good-for-you/). Of course I'm not suggesting you go out and buy a salt block to lick on daily and I have ZERO nutritional education (aside from trial and experiment on myself and research)
When choosing a healthy lifestyle (notice I did NOT say diet because that's just not REAL) sometimes you get a hankering for something sweet! Was the case this day....I used almond milk, added a teaspoon of Hershey's UNSWEETENED Cocoa and a half a banana...the banana helped bring out the sweet in the unsweetened chocolate!

Getting Started:
Gather your supplies (jars, ingredients). I will give you an amazing tip - I save jars from jams, cherries, salsa (you may not want to use that particular jar for your oats until after a million washes) and use these jars. If you don't want to be bothered with all that 9even though you are making YOUR green footprint a good one) you can purchase glass mason jars - sold er'where from Target to your local grocery store!

I like to spend an afternoon food prepping - makes for an EASY week and y'all know by now how much I LOVE the 6P's!!
(see my overnight oats in the background?!?!)

If you have any other tips, tricks or fave recipes I'd LOVE to hear from you!!

WHAT I'M WEARING....

Can I be honest? Over the last year I gained 30+ pounds and when that happens the LAST thing you feel like doing is trying to squeeze into your old clothes....SO you should buy a couple pieces to tie you over until you get on your fitness journey right?!?! I worried that would breed comfort and lack of motivation (I did end up buying the next size up in jeans ONLY and have made my oversized - which became fitted pieces work for the time being). I am on said fitness journey BUT haven't felt as good as I did 30 pounds ago....I mean in MY MIND I still weight the same - the clothes scream NO NO!! Anyway, that's why I have been MIA from WIWW...I just haven't felt that great in my own skin....I am working on it....SO for the time being you will get to see OUTFITS (I mean if you look good you def feel better - RIGHT?!?!). So I try to take the time to mix and match what I have...OH, and while on a spending freeze because Momma doesn't have it to spend right now....

 Jacket - Chico's
Printed Thermal -  Thrifted
Necklace (on shirt)  - Walmart
Earrings - Burlington Coat Factory
Jeans - Ross (yep - the next size up SO any time you see jeans it's the SAME pair - for now)
Booties - TOMS

Skull Printed Thermal - Target (mens section from a few years ago)
Statement Necklace - Same as above - WALMART
Jeans - ROSS
How have YOU mixed it up?!?!? Especially when on a spending freeze with too small clothes....
