FOODIE FRIDAY....Feeding A family on a budget

The cost of everyday living continues to go up...sometimes pay rates commiserate with the increase and sometimes not....I LOVE being thrifty and saving money whenever I can (it feels AWESOME to get a great deal and that way I can spend money in other areas of life). The last few months each time I go to the grocery store I can't believe how EXPENSIVE everything is (at least the healthy items). I once joked with the cashier that NOW is the time to become a vegetarian because meat is so costly. I am ALWAYS on the hunt for a good deal...My mom is always shocked that I get such amazing prices BUT that's because I buy off season, I'm always on the look out and I USED to have the bad habit of buying for "some-day" use (which has come in HANDY a lot BUT I have a TON of things and I do only buy IF I have a purpose now). You're probably saying "Ok, what's all this got to do with feeding your fam on a budget?!??!". When I go to the grocery store I always check the meat for the reduced labels (typically the grocer has to sell the meat within a couple of days so WE still have time to cook it or freeze it before it is past the sell date). Case in point...

I got almost 3lbs of EXTRA LEAN ground beef for $2.99/lb or $8.70 for the package (THIS IS A GREAT DEAL because I went to the store yesterday and got about a pound and a half of 85% lean for $8.25 - a lesser lean meat, less weight and almost the SAME price). When shopping it helps to e aware of current market prices so you KNOW when you're getting a deal. I took this meat and split it into 3 packages....enough for chili or burgers....and I got 3 meals.

Another day I was at the SAME store and there was reduced produce...THIS is good if you are going to cook or bake with it...There was a package of 9 roma tomatoes for .99. They were too soft to slice and eat BUT PERFECT for my homemade spaghetti sauce....featured in the pic on the right.
Here is the first stages of my sauce (the stuff in the back of the pan is the insides of tomatoes...when I make pico de gallo or guacamole I REMOVE the tomato insides and save them in a freezer bag for my sauce). 

I lightly fried up 1 italian sausage (mostly for flavoring) in garlic cloves....added the tomato guts and the roma tomatoes I got on sale and cooked down to a puree....once this was done I let cool and refrigerated overnight. The next day I poured the mixture (MINUS the sausage) into the magic bullet and blended....then I strain into a container (to omit the seeds). My kids made an INTERSTING observation...my sauce is an orange-y color....my daughter said "yes, because it's not preservative red". SMART girl!!! Not only am I saving money BUT I feel good about the food I am serving my family and I know EXACTLY what went into the sauce I have prepared.

TRY IT THURSDAY....USE WHAT YOU HAVE PORCH DECOR

SPRING has FINALLY SPRUNG which means we spend lotsa time outdoors! I have a deck BUT the front porch/yard seems to be the gathering spot when friends and fam are over....THIS is how it was styled fall last year....



It's cozy and cute BUT the scale of the furniture is too large for this space....SO these will be for sale at the flea market next weekend....

AFTER a year in the elements the front mat had seen better days (it held up incredibly well considering the duct tape border trim was from #dollartree and the mat was a remnant that came with the house)

HOLLA the mat's freshened up and ready for the season

 I gathered things I had lying around to create a vignette (the mermaid bucket is new and was posted last week on my THRIFTY TUESDAY finds - target $1.50, the packaged item is the cute lil garden flag you'll see below - that was $3.00 and the planter I found on the curb - and the pink bottom is intentional {my daughter asked if I only meant to paint it} once I get some pink petunias in the top it will all tie together!!)

Ta-da!! After a good scrubbing and sweeping and getting the pieces placed...here's my new for the season  front stoop (April Showers brings may flowers umbrella door hanging)

And NOW that's it's May - the Cinco de Mayo wreath hit the front door....


I am the girl who HATED pink....looks like I've had a change of heart!!! I've had a few neighbors comment on the ever-changing decor (in a positive way...IN FACT one person said "your house looks happy"....I LOVED that!!). Live is short - LIVE IN COLOR!!!

MANIC MONDAY...Cinco de Mayo Wreath

I saw THIS pic on insta and was inspired....


So I gathered the supplies I had on hand (wreath form, ribbon bits, flowers and a t-shirt)

This t-shirt had a hole in it BUT I knew I could re-use it for SOMETHING....

SO I cut it into a strip (and just kept going around the tee to make one long strip)

The I wrapped the wreath form with the pink fabric strip....

FOODIE FRIDAY....OVEN BAKED CHICKEN FINGERS

When trying to eat right AND cook for your family it's easy to get stuck in the same 'ol rut....that's what was happening to me....SO I looked back thru my old pictures (I do this for outfit ideas too) and found some pics of my oven baked chicken fingers!! (Sometimes we just need reminders - right?!?!?).  SO I set out to make them for dinner....I mostly only use chicken that is cage free, no steroids or fillers, etc 
(THESE can be found at wal-mart and are approx a dollar more than the walmart brand)

(BECAUSE all that stuff filters down into our bodies - if the breast is as big as your head it makes one wonder what kinda super pill that chicken was on and I know I don't want THAT in my body...I truly believe that is one of the reasons America is super-sized). Anyway, I have my chicken breasts - 

I added a tbsp of mayo and about 2/3 cup of fat free italian dressing and let them marinate all day....

When it's time to make dinner I crushed about 4 cups of corn flakes, added 2/3 cup parmesan cheese and 2 tbsp of italian seasoning - shake and now you have your "breading". Slice the chicken breasts into strips and coat with breading (no need to dip in milk or egg BECAUSE they are already covered in your marinade)

 Place in a pre-heated 375 degree oven for about 30 minutes (or until golden brown)

And VIOLA!! Dinner is served! It's better than fried chicken fingers, the fam loves it and you can feel good about a meal well served!!
