Key Lime Cupcakes

In my quest for a Key Lime cupcake at the local cupcake shops and not finding them I decided to take matters into my own hands! While grocery shopping at Wal-Mart I googled Key Lime Pie cupcakes and took my recipe from here http://www.bettycrocker.com/recipes/key-lime-cupcakes/0eb5a1d9-ed94-4c11-bfa4-04bf6fd07a0c

So I picked up all my ingredients (I already had limes at home, although they weren't key limes, I just used them anyway)
I wish I had taken step by step pics! Although these aren't entirely homemade, I consider them made from scratch! Because I had to add the lime jello mix and lime juice to the cake mix and the frosting was made from SCRATCH! Yumm-o! Cream cheese frosting!

They were DELISH! The cake mix was moist, the lie glaze under the frosting was über zingy (which I loved but it was too lime-y for everyone else) and the cream cheese frosting was so sweet and good.


The other night Maya felt inspired to bake too! So she made strawberry cupcakes......She didn't frost them ....

So we topped them with fresh whip cream and added strawberries
and then she ate 4 mini-cupcakes among other things and was sick as a dog the next day! SO needless to say she won't be eating anymore of her cupcakes!

Hope Maya is feeling better! I have a few key lime cake recipes I've been saving but haven't tried yet. I'll share them if you'd like!
